Orchard Wedding - Tapas and Apps 

At this wedding, we set the trailer up in the field nearby and served a Tapas style meal, bringing plate after plate of our food until the party told us to stop before they burst. They had long tables set up where at least 30 people lined each side, the Tapas were placed in the middle of the tables and family and friends passed the plates around serving themselves. It was a successful event and the wedding party was delighted!

Appetizers

  • Smoked Salmon Mousse on Bagel Chip
  • Pan Seared Scallop and Cucumber on Stick with Lime, Honey and Cilantro
  • Apple, Walnut and Goat Cheese in Filo Pastry (maple syrup glaze)

Tapas (Served cold)

  • Rillette de Canard with Toasted Baguette (blueberry chutney)
  • Avocado, Cherry Tomato, Bocconcini, Fennel and Basil Salad (olive oil)
  • Bean Sprout and Cucumber Salad with Sesame Dressing (fresh parsley)
  • Ceviche (freshest firm white fish I can find) Chilies, Cilantro, Avocado and Tomato

Tapas (Served hot) 

  • Grelot Potatoes with Fresh Parmesan Served on a Bed of Roquette
  • Shrimp Brochettes Served Over Grilled Eggplant and Zucchini
  • Couscous with Spinach and Roasted Pine Nut
  • Grilled Asparagus Wrapped in Prosciutto with Sliced Roasted Almonds

Tapas (Served hot) 

  • Tandoori Chicken Breast Served with Mint Yogurt Sauce
  • Bacon Wrapped Pork Tenderloin Stuffed with Dates, Coconut Curry Sauce

  • Large Ravioli (boiled, then breaded and deep fried) Stuffed with Mushroom and Cheese, Served with Cream Sauce

Country Church Wedding - Quebec Mechoui

Our trailer was parked next to the small country church at this wedding. We had a full pig spit-roasted on a barmechoui turning all day while the wedding was taking place and then for dinner set up a huge buffet where family and friends served themselves; the meat was cut directly from the roasting beasts as people passed by. The clients had asked us as well to prepare little finger sandwiches which they brought out later in the evening. A long day, but a lot of fun!!!  

Méchoui

A full Quebecois lamb (rosemary, garlic, turmeric, E.V.O, mint, chilies)

60 lbs. Quebecois Hog (garlic, E.V.O, celery salt, onion powder, oregano, dry mustard)

Italian - Portuguese Wedding

This wedding never took place but the menu was fun to do! The clients wanted a buffet with 3 cooks behind making fresh food for their friends and family during the entire evening. So we decided on this style of menu where guests could enjoy a custom pasta. Choose from a selection of grilled meats and have a salad bar to pick at. The story of this couple ended well, they eloped!!!

Vegetarian Country Bohemian Wedding

This 100% vegetarian wedding was a huge success. The guests were blown away by the amount of flavor and richness crafted into each dish. The buffet was set in a beautiful rustic barn amongst the rolling hills of the Eastern Townships. A great event!
